Jalapeño and Smoked Cheddar Turkey Burger

Ingredients

2 tbsp olive oil

2 Large jalapeño chili peppers, seeded and finely chopped

1/2 c finely chopped scallions, both white and green parts

2 tsp ground cumin

1 tsp each salt and freshly ground black pepper

3 lbs GROUND TURKEY

4 oz smoked Cheddar cheese, grated

As needed Nonstick spray oil or vegetable oil

Directions

Over medium heat, heat the olive oil in a sauté pan. Add the jalapeño and scallions and cook for 4 to 5 minutes until the vegetables soften. Add cumin, salt and pepper. Stir to combine; transfer the mixture to a plate to cool.

In a bowl, gently mix the cooled jalapeño-scallion mixture, turkey and Cheddar cheese together, just until combined. Divide the mixture into 12 portions and form each into a patty about 3/4-inch thick.

Per order: Coat a griddle or sauté pan with nonstick cooking spray and heat over medium heat. Add burger and cook until the internal temperature reaches 165 degrees F, turning once, about 12 minutes.
