Japanese Turkey “Tonkatsu” with Ginger-Soy Sauce

Ingredients

1/4 c soy sauce

1 tbsp fresh ginger, sliced thin

1 Scallion, sliced thin

1/2 tsp cranberry sauce

Sugar Pinch

1 tbsp freshly squeezed lime juice

4 2-oz COOKED TURKEY BREAST, sliced into 1/2-inch thick steaks (cut across the grain)

1/2 c flour

1 Large egg, beaten with 1 tbsp cold water

1/2 c panko breadcrumbs

Vegetable oil As needed

Combine soy sauce, ginger, scallion, cranberry sauce, sugar and lime juice in a bowl with a whisk to break up the cranberry sauce. Let stand for at least 20 minutes to meld flavors.


Dredge cooked turkey steaks in flour, then in egg wash, and then in breadcrumbs. Reserve.


In a large sauté pan over medium-high heat, add enough vegetable oil to coat the bottom of the pan 1/4 inch deep. Heat until a breadcrumb bubbles or "bounces" when added to the oil.


Add breaded turkey steaks to oil and pan-fry until golden brown on one side. Flip with tongs and brown on other side. Remove and drain on paper towel.


Serve hot with ginger-soy sauce on the side.
