1 c Avocado, Finely Diced
1 c Papaya, Finely Diced
1 tbsp Rice Vinegar
1 tsp Sugar
1 oz Chopped Fresh Mint
To Taste Salt And Freshly Ground Black Pepper
4 Hawaiian Sandwich Rolls, Split
1 lb OVEN ROASTED TURKEY BREAST, Shaved
4 Slices Jarlsberg Cheese
2 tbsp Thinly Sliced Maui Onion
4 To 8 Crisp And Chilled Lettuce Leaves
Avocado Papaya Mint Relish
Combine ingredients in a mixing bowl. Cover and refrigerate for 3 hours to allow flavors to mesh.
SANDWICH ASSEMBLY: Layer the sandwich ingredients in the following order. On the bottom of each roll, place 4 ounces turkey, 1 slice Jarlsberg and 1/2 tablespoon onion.
SERVICE: Spread the relish in an even layer atop the onion. Place one lettuce leaf atop relish and cover with roll top.
