Mexican Crunchy Turkey Shells

Ingredients

1 lb GROUND TURKEY

1 Package (1.25 oz) taco seasoning mix

5 Hard-cooked eggs, shelled

1 egg, lightly beaten

1/4 lb no-salt-added tortilla chips, crushed fine

Thick salsa As needed

Directions


 



Combine turkey and seasoning mix; divide into 5 equal portions.


Shape turkey mixture around shelled, hard-cooked eggs.


Dip each wrapped egg into the beaten egg and then roll in finely crushed chips.  Coat well.


Arrange eggs in a shallow baking pan. Bake at 350 degrees F for 25 to 30 minutes or until the turkey is no longer pink. Cool and store in refrigerator.


Cut into wedges and serve with salsa, if desired.
