Penne with Italian Turkey Sausage

Ingredients

1 to 1-1/4 lbs HOT TURKEY ITALIAN SAUSAGE

16 oz penne pasta

1/3 c chopped sun-dried tomatoes packed in oil

1-1/4 c refrigerated or jarred Alfredo pasta sauce, heated

1/2 c ripe pitted olives

1/3 c shredded Parmesan cheese

2 tbsp chopped fresh parsley

Directions

Cook sausage according to package directions to an internal temperature of 165 degrees F. Cut sausages into 1/2-inch circles.

Meanwhile, cook penne pasta according to package directions.

Drain sun-dried tomatoes; rinse and drain again.

Add cooked sausage, sun-dried tomatoes, sauce and olives to drained cooked pasta; toss to coat. Add a little pasta water if additional sauce is needed.

Sprinkle with Parmesan and parsley.
