1-1/4 c mayonnaise
1/2 c prepared buffalo sauce
16 Thick slices jalapeño cheese bread
2 lbs OVEN ROASTED TURKEY BREAST, thinly sliced
8 Slices Pepper Jack cheese
4 Whole red bell peppers, roasted, seeded and cut in half
8 Pearl tomatoes, sliced
24 Thin slices green chilies
2 c chopped romaine, washed and drained
1 c chopped fresh cilantro
As needed tortilla chips and/or fruit salsa as garnish
In a bowl, mix mayonnaise and sauce together.
Cover, label and date, and hold under refrigeration for service.
Preheat oven to 350 degrees F.
On each side of bread, spread 1 tablespoon Buffalo Mayonnaise Spread.
Top each bottom half with 4 ounces turkey breast and 1 slice cheese.
Place each half on a baking sheet and bake until cheese melts and other side of bread is lightly toasted.
Remove from oven and add 1/2 roasted bell pepper, 3 slices tomatoes, 3 slices green chilies, 1/4 cup chopped romaine and 1/8 cup chopped cilantro to each sandwich.
Top with remaining bread slice.
Cut each sandwich in half, on the diagonal.
Serve with warm tortilla chips and/or fruit salsa, if desired.
