8 oz rotini pasta, cooked, washed and drained
1 c cubed COOKED TURKEY
1 (4-oz) can sliced black olives, drained well
2 oz Pepper Jack cheese, cut into 1/4-inch cubes
2 c seeded and chopped tomatoes, DIVIDED
4 Medium green onions, thinly sliced
1 tbsp fresh cilantro leaves
3 tbsp light olive oil
2 tbsp white wine vinegar
1 tsp minced garlic
1/2 tsp ground cumin
1/2 tsp chili powder
In a large bowl combine pasta, turkey, olives, cheese, 1 cup tomatoes and green onions.
In food processor or a blender jar, process cilantro, oil, vinegar, garlic, cumin, chili powder and remaining tomatoes. Process until smooth.
Combine dressing and turkey pasta mixture. Toss to coat. Cover and refrigerate, for at least, 1 hour.
