12 (6-Inch) flour tortillas
1 c black bean puree
1 lb COOKED TURKEY BREAST, chopped
1/2 lb shredded Jack cheese
1/2 lb shredded Cheddar cheese
1/4 c chopped cilantro plus additional for garnish
Place tortillas on a flat surface. Lightly spread bean puree over bottom half of each tortilla. Sprinkle with turkey, cheeses and cilantro.
Fold top half of tortilla over filling.
Sear until golden brown and cheese is melted.
Cut into quarters. Serve hot with additional cilantro for garnish.
