1 lb BONELESS TURKEY THIGHS, poached and shredded
1/3 c chipotle chiles in adobo sauce, pureed
1 c corn
3/4 c green olives, chopped
1/2 c raisins
3 to 3-1/3 c flour
1 tsp salt
1/2 c vegetable oil
1/2 c cold water
In a saucepan, combine poached/shredded turkey, pureed chipotle peppers, corn, olives and raisins. Add enough water to thin slightly and warm over medium heat. Set aside.
In a bowl, mix together 3 cups flour and salt. Add oil and water slowly, until incorporated, and knead dough until elastic.
Dust surface with remaining flour, as needed. Roll dough to 1/8-inch; cut out circles. Portion turkey mixture in the center of each. Fold over to form half-moon shapes. Seal edges with a fork.
Bake in a preheated 350 degree F. oven until golden brown.
