Sunburst Turkey and Rice Salad

Ingredients

1 c lemon yogurt

1 c mayonnaise

2 tsp fresh lemon zest

1 tsp curry powder

6 c cooked brown rice

4 c COOKED TURKEY, diced

1 c celery, diagonally sliced

1 c fresh pineapple chunks, drained

1 c fresh orange sections

1/2 c water chestnuts, drained and thinly sliced

1/2 c scallions, thinly sliced

1/2 c walnuts, chopped

12 Large lettuce leaves, washed, dried and chilled

CITRUS DRESSING



In a small bowl, combine yogurt, mayonnaise, lemon zest and curry powder, whisking until smooth. Reserve.




SALAD



Combine rice, turkey, celery, pineapple, oranges, water chestnuts, scallions and walnuts in a large bowl.


Pour citrus dressing over all, tossing to coat well. Cover and refrigerate.


Line chilled plates with lettuce leaves. Divide salad evenly among plates.
