Ingredients

10-1/4 lbs turkey taco meat, thawed

50 small bagels (2-3 oz each), split

12-1/2 c taco or picante sauce

12-1/2 c shredded lettuce

12-1/2 c diced tomatoes

6-1/4 c shredded Mexican cheese blend

Directions

To steam turkey taco meat: Place a small amount of water in bottom of a large pan. Place each thawed 5 pound bag of product in pan, place pan in steamer and heat for 20-25 minutes or until the internal temperature reaches 165 degrees F. OR to simmer turkey taco meat: Bring a large pot of water to a full boil on high heat. Place the thawed bag of product in boiling water and heat for 20-25 minutes or until the internal temperature reaches 165 degrees F.

Arrange bagel halves on pans. Lightly toast bagels.

Assemble bagels: For each bagel half, spread 2 tablespoons taco or picante sauce atop bagel halves. Add 1.64 ounces hot taco meat. Cover each with 2 tablespoons lettuce, 2 tablespoons tomatoes and 1 tablespoon shredded cheese.


If you don't have turkey taco meat, make your own using the seasonings below and ground turkey. Use 2-3 tablespoons of seasoning per pound of ground turkey.
