1 (1/2 oz) slice American cheese
2 oz (sliced into thin 1/2-oz slices) COOKED TURKEY BREAST
1 (8-Inch) tortilla (whole wheat preferred), slightly warmed
Mustard, mayonnaise and chopped lettuce & tomato As needed
Cut cheese slice in half diagonally.
Arrange turkey slices over slightly warmed tortilla.
Place cheese, point to point, so cheese covers the middle of the tortilla.
Roll up tightly. Place, seam-side down, in steam table pan.
If desired, heat to an internal temperature of 145 degrees F and hold at a serving temperature of 140 degrees F or above.
OR serve chilled at an internal temperature of below 41 degrees F.
Serve with mustard, mayonnaise and chopped lettuce and tomato.
