Turkey and Monterey Jack Burgers

Ingredients

4 lbs GROUND TURKEY

1 lb Monterey Jack cheese w/ jalapeno peppers, grated

8 egg whites

1 c plain dry breadcrumbs

1 c scallions, chopped

1 tsp cayenne pepper

Salt and freshly ground black pepper To Taste

16 whole wheat buns, split

8 oz cilantro mayonnaise

Iceberg lettuce, shredded As needed

Directions


 



Gently combine ground turkey, cheese, egg whites and bread crumbs. Fold in scallions, cayenne, salt and black pepper. Shape into 16 burgers, cover and refrigerate for 1 hour.


Place burgers on preheated char broiler. Grill until the internal temperature reaches 165 degrees F, about 3-4 minutes per side, turning only once.


Per portion: place one burger atop each bun half. Spread cilantro mayonnaise on bun tops and add shredded iceberg.
