Turkey Burgers with Chipotle-Chili Tartar Sauce



3/4 c mayonnaise

2 tbsp extra-virgin olive oil

2 tbsp minced red onion

2 tbsp fresh dill, chopped

1 tbsp canned chipotle chilies, minced

1 tbsp capers, drained

Salt and pepper To Taste


4 whole wheat buns, split

4 Thin slices red onion

8 Slices plum tomato

2 Bunches arugula, washed, dried and chilled




Whisk mayonnaise, olive oil, minced onion, fresh dill, chipotle chilies and capers in a small bowl. Season with salt and pepper.

Cover and hold for service in the refrigerator.


Preheat grill/barbecue to medium heat.

Form ground turkey into four 1/2-inch thick patties. Sprinkle with salt and pepper.

Grill turkey until cooked through and internal temperature reaches 165 degrees F.

Grill buns until just toasted.

Spread 1 tablespoon sauce on bottom half of each bun. Top each with turkey burger, then 1 more tablespoon sauce.

Top each with 1 onion slice, 2 tomato slices and 1/2 bunch arugula. Cover with bun tops.

Serve, passing remaining Chipotle-chili Tartar Sauce separately.
