About this Dish

Turkey Collard Green Wraps swap out the pita for a collard green wrap. Wrapping your sandwich in a collard green leaf is another way to pack even more essential nutrients into your midday meal! This recipe uses grilled turkey kebabs, but you can sub in any cooked turkey of your choice. Fill the wrap with hummus and other Middle Eastern flavors for a healthy, handheld meal on the go.

Ingredients

4 large collard green leaves, blanched

1 c Middle Eastern turkey kebab*, roughly chopped, or leftover turkey breast

1/2 c romaine lettuce, sliced thin

1/4 c hummus, store bought

1/2 c tabbouleh, store bought

4 tbsp olive tapenade

1/4 c feta cheese

Directions

Blanch the collard greens: In a shallow sided pan, bring a couple inches of water to a boil. Reduce to a simmer. One at a time, place each collard green leaf in the simmering water for 20 to 30 seconds until soft. Place on a towel to dry and cool.

Get all of your ingredients prepped and placed in small bowls. Set up a wrap building assembly line.

With the collard greens leaves flattened out, start by placing a spoonful of hummus on each leaf ½ an inch away from the bottom.

Staying in line with the hummus add the romaine, turkey, tapenade, tabbouleh and tomato slices.

Sprinkle the feta cheese over the top.


To fold the collard green…

Fold over the sides of the wrap so they are almost touching, but keep an inch or so between the ends

While holding the ends in place, bring up the bottom edge and continue to roll the wrap, holding slightly taut so it stays together, one or two more times until the whole thing is secured.


Wrap to take on the go…

Cut a sheet of parchment or deli paper that is about one and a half times the length of the wrap, place it vertically in front of you.

Place the wrap diagonally across from the paper, close to one of the corners. Lift that corner up and over the wrap, keeping it flush with the green.

Roll the wrap in the paper towards the far opposite corner folding in the sides as you go.

With everything tucked, use a small piece of tape to keep the seal together for traveling.
