Lean grilled turkey breast, or any leftover turkey breast, is the base for this salad chock full of delicious toppings. Prepping it all in advance makes this a great lunch option to grab as you run out the door. When it’s time to eat, shake it all up and enjoy!

Ingredients

2 c romaine lettuce, roughly chopped

1 c turkey kebab*, roughly chopped, or leftover turkey breast

1/2 lb pre-cooked turkey bacon, roughly chopped

1 c cherry tomatoes, halved

1/2 c pickled red onions, or half that amount of fresh red onions

1 avocado, halved and chopped

4 hard boiled eggs, halved and quartered

1/2 c red wine vinaigrette, store bought or homemade

1/4 c blue cheese, crumbled

4 32oz mason jars with lids

Directions

With all of the ingredients prepped, set up the four mason jars on your kitchen counter.

Fill the bottom of each jar with 2 tbsp of red wine vinaigrette.

Add ingredients to each jar in the following order: chopped avocado, turkey, cherry tomatoes, turkey bacon, eggs, pickled onions and blue cheese.

Top each off with a handful of lettuce, and seal with the lid.

Refrigerate until ready to go and don’t forget your reusable salad fork!

When ready to eat, give the jar a good shake so everything is combined.
