1 tsp oil
1/2 lb GROUND TURKEY
1 c onion, chopped
2 c cooked potatoes, cut into 1/2-inch cubes
1/2 tsp salt
1/4 tsp pepper
1/2 c reduced-fat pepper jack or Cheddar cheese, shredded
Preheat oven to 375 degrees F.
In large skillet, over medium-high heat, heat oil until hot. Add turkey and onions. Cook 5 minutes or until turkey is no longer pink. Add potatoes and cook 2 to 3 minutes. Stir in salt and pepper.
Lightly coat a 1-quart oven-proof baking dish with vegetable cooking spray.
Bake turkey mixture in preheated oven 10 to 15 minutes. Top casserole with cheese and continue baking about 3-5 minutes or until cheese melts.
