1 lb GROUND TURKEY
1/2 c finely chopped onion
1 tsp garlic powder
1/2 tsp Italian seasoning
1/4 tsp salt
1/4 tsp black pepper
1-1/2 c reduced-fat cottage cheese
1 Package (10 oz) frozen chopped spinach, thawed and squeeze dried
1/2 c Parmesan cheese, grated
1/2 c plain yogurt
1 Large egg
1 tbsp dried parsley
12 uncooked manicotti shells
4 c prepared spaghetti sauce
1/2 c Mozzarella Cheese, grated
In 1-quart microwave-safe dish combine turkey, onion, garlic powder, Italian seasoning, salt and pepper. Cook in microwave at HIGH (100% power) 4 to 5 minutes or until turkey is no longer pink, breaking up ground turkey halfway through cooking time.
In large bowl combine cottage cheese, spinach, Parmesan cheese, yogurt, egg, parsley and turkey mixture.
Stuff shells with turkey mixture. In bottom of 9X13-inch microwave-safe baking dish, spoon 2 cups spaghetti sauce. Layer shells over sauce. Top shells with remaining turkey mixture and spaghetti sauce.
Cover baking dish with vented plastic wrap. Cook in microwave at HIGH (100% power) 10 minutes, turning dish halfway through microwave time. Cook in microwave at MEDIUM-HIGH (70% power) 17 minutes, turning dish halfway through microwave time.
Uncover dish and sprinkle Mozzarella cheese over manicotti last 3 minutes of microwave time. Let stand 15 minutes before serving.
