Ingredients

8 oz non-fat or low-fat plain yogurt

3 tbsp fresh mint, chopped and divided

1 lb ground turkey

1/2 c zucchini, shredded

1/2 c dry bread crumbs

1 Large egg

1 tsp ground cumin

1/4 tsp salt

1/4 tsp freshly ground black pepper

1 Large red bell pepper, seeded and cut into 1-inch pieces

1 Medium zucchini, cut into 1/2-inch slices

1 tbsp vegetable oil

4 pita breads, halved and toasted

Directions

Heat broiler or prepare charcoal for grilling.

Combine yogurt and 2 tablespoons mint in small bowl. Cover and refrigerate.

Combine turkey, shredded zucchini, bread crumbs, egg, remaining mint, cumin, salt and pepper in medium bowl. Mix gently.

Shape into 1-1/2 inch balls.

Thread meatballs alternately with vegetables onto skewers.

Broil or grill 4 inches from heat, basting with oil until browned and cooked through, turning once, about 15 to 20 minutes. The internal temperature should register 165 degrees F.

Serve with yogurt-mint sauce and pita bread.
