8 oz DELI-STYLE TURKEY or COOKED TURKEY, cubed
1 Medium Gala apple, thinly sliced and sprinkled with lemon juice
1/2 c chopped red onion
5 oz fresh crisp salad greens (romaine, spring mix, etc.)
1/4 c pecans, toasted
1/3 c Gorgonzola cheese, crumbled
1/4 tsp black pepper
1/2 c frozen apple juice concentrate, thawed
1/4 c balsamic vinegar
1-1/2 tsp dark sesame oil
SALAD ASSEMBLY
Combine turkey, apple and red onion in a medium bowl. Toss well.
Place 2 cups salad greens on 2 chilled plates. Top with turkey mixture.
Sprinkle with pecans, cheese and pepper.
SALAD DRESSING and SERVICE
Combine apple juice, vinegar and oil. Stir well with a whisk.
Spoon 3 tablespoons dressing over each serving.
