1 c freshly squeezed orange juice
1/3 c red wine vinegar
2 tbsp poppy seeds
2 tbsp olive oil
1 tbsp Dijon mustard
1/2 tsp black pepper
20 c red leaf lettuce, washed, dried, chilled and torn
8 c baby spinach leaves, washed, dried, chilled and torn
2 lbs COOKED TURKEY BREAST, cut into 1/2-inch julienne
40 oz mandarin oranges, drained
Orange zest As needed
CITRUS VINAIGRETTE
Combine orange juice, vinegar, poppy seeds, oil, mustard and pepper. Set aside.
SALAD
In large bowl toss together lettuce, spinach, turkey and oranges. Pour dressing over turkey mixture.
GARNISH
Garnish with orange zest and serve immediately.
