2 c COOKED or PULLED TURKEY BREAST, minced
1/3 c minced celery
1/3 c minced red bell pepper, seeds and ribs removed
1/3 c mayonnaise
2 tsp fresh lemon juice
1/4 tsp each salt and freshly ground black pepper
Mayonnaise As needed
6 (2-oz) slices flatbread, wheat flavor
6 to 12 Leaves Romaine, washed, drained and chilled
Fresh fruit As needed
TURKEY SALAD
Mix cooked turkey, celery, bell pepper, mayonnaise, lemon juice and salt and pepper together. Cover and hold for service in the refrigerator.
ASSEMBLY
Spread mayonnaise evenly over entire surface of each flatbread slice.
Place 1 to 2 leaves romaine on the rounded end of each flatbread slice.
Divide turkey salad evenly and spread over lettuce leaves.
Roll up tightly. Cut on the diagonal. Serve with fresh fruit.
