1 tbsp garlic-flavored olive oil
1 Large white onion, thinly sliced
2 c diced tomatoes with juices
2 c chipotle salsa
2 tbsp cider vinegar
4 c PULLED COOKED TURKEY, coarsely shredded
48 Restaurant style tortilla chips (unbroken)
2 c diced fresh avocado
2 c shredded Monterey Jack cheese
1 c chopped cilantro leaves
In a large skillet, heat oil. Add onion and sauté over medium heat until onion is soft and golden.
Add tomatoes, salsa and vinegar. Reduce heat to low and gently simmer, until mixture is thickened. Add turkey. Hold warm for service.
Per order: Top each tortilla chip with a large tablespoon of turkey mixture. Garnish each with avocado, cheese and cilantro.
Serve 4 tostaditas per order.
