Turkey Waldorf Sandwich

Ingredients

6 oz COOKED TURKEY BREAST, cubed

1/2 c diced celery

1 Small tart red apple, cored and cut into small cubes

2 tbsp walnuts, chopped

1 tbsp reduced-calorie mayonnaise

1 tbsp non-fat yogurt

1/8 tsp freshly grated nutmeg

1/8 tsp ground cinnamon

4 lettuce leaves, washed, cleaned and crisp

8 Slices reduced-calorie raisin bread

Directions


 



In medium bowl combine turkey, celery, apple, walnuts, mayonnaise, yogurt, nutmeg and cinnamon. Blend well. Cover and refrigerate at least 1 hour to allow flavors to blend.


To serve, arrange a lettuce leaf on a bread slice. Spoon 3/4 cup turkey mixture over lettuce leaf and top with another bread slice. Repeat with remaining ingredients.


NOTE: Turkey mixture will keep two days in refrigerator.
