1 lb HOT ITALIAN TURKEY SAUSAGE, cut into 1-inch pieces
2 15-oz Cans whole kernel corn, drained
1 c thick chunky salsa (medium to hot)
1/2 c black olives, pitted and sliced
1 c low-fat Mozzarella cheese, shredded
Corn tortillas As needed
Over medium heat, in a large skillet, cook sausage, corn and salsa. Cover and simmer on low heat 10-15 minutes or until sausage is no longer pink in the center.
Stir in olives. Remove from the heat.
Stir in cheese, cover and let stand until cheese is melted. Serve with corn tortillas.
